Tailgating at Lambeau Field - Saz's Style





One of the greatest things in the catering business is to be able to provide new ways to enhance people's experiences in their food and entertainment endeavors. With the TTZ (Tundra Tailgate Zone) located right in the heart of the Lambeau Field parking lot, it became apparent to us that to offer a tailgate package to Packers fans in the parking lot could certainly add a bonus to a trip to the Tundra.

This all stared with an email through our website from a loyal Packer fan who saw that we were operating the TTZ and wanted to know if we could do a small tailgate for him in the lot at Lambeau Field.

Hmmm.... an opportunity.... let's see, we have a kitchen already built into the tents of the TTZ, we have all of our favorite Saz's foods being prepared for the TTZ, we have the expertise to cater a tailgate at the TTZ - Maybe if our partners at Lambeau will work a program with us to provide tailgates to the ticket holders at the TTZ....???

Oh, by the way, did we tell you that you can now have Saz's cater a tailgate for you at Lambeau Field?

Just think, you no longer have to argue about who gets to hold the grill on their lap during the drive up to Lambeau Field. Finding a place to stash all the extra food and coolers is now a thing of the past. What a concept, Louie!

Call Saz's, put together a tailgate menu, gather all your favorite adult beverages, throw your friends or family in the Yugo and head up Nort! Food's waiting for you! You let us know when you have arrived and where you are parked and the tailgate begins. (just put a flag on your car says "We Love Saz's". That will help us find you.) Another "hhmmmm.." I smell a marketing idea here.

Tundra Tailgate Zone

Well, we're back. We have been spending the last few weeks getting the new Tundra Tailgate Zone ready for the regular season. For those of you that don't know what this is, follow this link to our website and we'll fill you in: http://sazs.com/Catering/TundraTailgateZone.html

It's been a "pre-season" warm-up for our TTZ crew at Lambeau Field, also. The first date open was on August 8, which was the Family Day tradition at Lambeau Field. A great time for us to begin working out the bugs and finding the best way to get Saz's great foods to people visiting for this fun day. The weather turned really ugly late in the day and by the time all the fans trecked into the stadium, everyone was sent packing for cover. Lighting and high winds chased them off the field. The Packers never did get their scrimmage in.

With the help of the Lambeau Field TTZ staff, we made a few changes and readied our huge climate controlled tent for the next preseason game on Aug 15. This was part of the Milwaukee Fans, Gold Package and many who attended the Midwest Shrine Game were all familiar with Saz's. We were explaining to people all day just what we were doing running the food and beverage operations of the TTZ at Lambeau Field. (truth be told, where better to let the Wisconsin sport fan world know about Saz's!! - but I think Joe B just wanted to get a little closer to Packer Country.) Had a great day and continued tweaking our menu and made changes with the placement of our concession stand inside the tent and moved the main bar around a bit. Had a really busy day, the bartenders were really humpin' beverages out to all the Packer fans. The crowd inside our "TTZ Lounge" were in the hundreds. 20 plasma sets and a 10 foot big screen were on, the band was playing and we were all feeling the buzz of being at Lambeau. Everyone really had a blast.

Once the game started, we had a great crowd of people that stuck around to watch the game in the tent. This is broadcast live during every home game. Great digs to hang out, grab some eats and adult beverages and watch the game. You do not have to have a ticket to get in the TTZ to watch the game.

Yesterday, August 22, the Packers played the Bills at the last preseason home stand. This week really cranked it up a notch. Packer Fans are beginning to hear about the TTZ and are finding out this is THE place to be before a Packer game. Our regular season menu made its debut and was received well by everyone. From buckets of popcorn, Saz's BBQ Pork, Sour Cream and Chive Fries, Mozzarella Marinara, hot dogs, brats and steak sandwiches, just to name a few, were flying over the counter. The bar backs were running sweaty trying to keep the beer coolers stocked and Blood Mary's were flying over the bar. The band was cranking, people were dancing and Packer Fever was here again. I'll tell ya, the TTZ is going to be on everyone's mind as the season gets hot. Even after the game started we had a great crowd of fans watching the game in the TTZ. After the game we had some great give-aways and drink special for everyone. Keep in mind we're open for at least one hour after the game ends.

I'll try to get a few pictures posted so you can get an idea what this years TTZ is all about. Green Bay and Lambeau Field are really in for a treat - Saz's Style.

September 13 - Look out. This is the first regular season game, at HOME, against who else - DA BEARS. I can just see it now....

Good Morning America and Saz's Catering

I'll have to get more information to you a bit later, but Good Morning America gave us a call last week, Friday and contracted our services to provide a BBQ Cookout for the Waukesha neighborhood featured on the At Your House series. We were sworn to secrecy and couldn't discuss any aspect of the show itself. It was crazy. It was thought that about 300 people from the neighbor may show up for the BBQ - ah, not! This blossomed into a huge party for 1500 real fast.

Not worry, Saz's Catering expertise in such matters quickly cranked it up a notch and handled the increase without any troubles.

We also fed the GMA crew breakfast and catered many other aspects of this terrific event. Chef Paris of Saz's was on hand to assist Sandra Lee on her show.

Updated and New Casual Catering Menus

We just finished publishing all of our new casual catering menus. Our Tailgate & Picnic Menu, Lunch is Served and Dinner is Served menus have all been posted on the website for your reading pleasure.

A couple highlights of the menus:

  • Tailgate & Picnic Menu - We've heard from a bunch of our clients who really enjoy picnics ask for this one. How about "Sliders" as a menu item? Well... we did just that. We created a buffet that has Grilled Chicken Breast, Burgers, BBQ Pork, BBQ Chicken and Tenderloin Sliders. Tiny little sliders. (not so tiny, really...) Too cool.   • The restaurant has reinvented our homemade potato chips and called them Kettle Chips. They come in the following flavors of Parmesan Ranch, Four Pepper Chipotle and traditional chips. We've added them to our menu too. (Sorry Chef Rob, we're stealing your chips...)
  • Along with our traditional favorites on the Lunch is Served menu, we've created the "Diner Delight". Kind of a throwback to the old Blue Plate Special. Hot Roast Beef or Hot Turkey and gravy with white bread and mashed potatoes. Good lord, this is the perfect buffet dinner for a comfort food fix.   • Nancy Sazama has finally given out her famous Cole Slaw recipe. Wow, this should have been on the menu a long time ago. Choose this for your salad the next time you order from any one of the menus.

The State House Restaurant has undergone a complete menu make-over, also. I'll get to that in a day or two. Don't hesitate to go to our website. All the new menus, Catering and Restaurant are all listed on the web.

P.S. - Stop in to the State House and Try one of new "Milwaukee Inspired". Delicious, new concoctions from Saz and Chef Rob. "Signature Smoked Andouille Sausage" Sandwich is a real killer - Pretzel Roll bun that is out of this world.....mmmmm.

Saz's Spring Wedding Showcase

What better way to be able to show the many aspects of our wedding event planning, catering services and menu creativity, than to have a wedding reception with you, the client in mind. In partnership with 1451 Renaissance Place, here in Milwaukee, well, we did just that.

Invitations to our Spring Wedding Showcase are now being mailed inviting prospective brides and groom's to our show on Sunday, May 3rd from 1:00 p.m. - 5:00 p.m.

At this very special event you will be greeted with hand passed hors d'oeuvres offered by our white gloved waitstaff. Enjoy a glass of wine and enter into the world of first class service.

Here you will partake in a wild culinary display of European Food Stations, Sit Down Dinner and Chef Carving Buffet presentations. Scrumptious passed hors d'oeuvres of Louisiana Crayfish and Crab Cake with French Quarter Remoulade and Sesame Crusted Sea Scallops with Miso Ginger Glaze and Chive Matchsticks.

Extra! Extra!

Our brand new catering menus will be making their appearance in April of 2009- be sure to watch for those, they are chock full of all kinds of new and creative items. Plus, all those award winning favorites you’ve come to love!

Speaking of new menus, our restaurant, Saz's State House, will be launching new menus (Lunch and Dinner) beginning in mid April. Come down and see what Chef Rob Earhardt has in store for you! (We have yet to let anyone know about these exciting new menus, and by following our Blog, you'll get information about Saz's before everyone else does.)

Spring is here and Summer is just around the corner. Don’t forget to check us out at your favorite Summer Fairs and Festivals. We’ve got some fun new items in store for you there as well.
